Salmon in Mushroom Cream with Quinoa

Salmon is one of the easiest type of fish to find here in China. It's available at most online supermarkets as well as big chains like Carrefour and guess what? You are not going to break the bank!

I bought mine on freshfresh.com, a new online seller for fresh fish, fruit, vegetables and meats. So far I love it!

This recipe is great for winter or summer time, it's quick and healthy and very colorful! Here is how to make it.

Ingredients (serves 2):

  • 2 salmon fillets (140 gr. each)
  • 200 ml heavy cream
  • 1 cup cherry tomatoes
  • fresh basil leaves
  • salt and pepper
  • 2 tbsp. olive oil
  • 2 cup sliced mushrooms
  • 1/2 avocado
  • 1-1/2 cup quinoa, cooked
  • 2 cloves garlic

Season your salmon fillets with salt and pepper

Cut the tomatoes in wedges and set aside

Slide the mushrooms

In a skillet heat up 2 tbsp. of extra virgin olive oil and sauté' the garlic until it has got a nice golden brown color.

Add the salmon skin down and cook it for 2-3 min on medium-high so that it gets a nice crust

Add now the sliced mushrooms, season with salt and cook them on medium-high for 2- 3 mins.

Add then the tomatoes, some fresh chopped basil leaves. Cook for 2-3 more minutes.

Then pour in the heavy cream. Adjust with salt and add some pepper. Cover with a lid and let simmer for 2-3 more minutes.

Divide the quinoa between the 2 serving plates, lay the salmon on top, scoop out some of the sauce and mushrooms/tomatoes dressing, decorate with some slices of avocado and basil leaves

and serve it up!

Easy and quick as promised. This dish will take you less than 30 min to bring on your dining table!
