This sabudane ki khichadi is very popular sabudana preparation in Gujarat, Maharashtra, Madhya Pradesh and Rajasthan.
As sabudana contains only starch in high content, groundnuts (rich in proteins and fats) are added to increase its nutritional value.
What is sabudana?Sabudana in English is called pearl tapioca. It is also called tapioca sago and is produced from tapioca roots (cassava), which looks somewhat similar to sweet potato.
Sabudana is made from starch extracted from tapioca root.
Sabudana is a widely used food product in Maharashtra, Gujarat, Rajasthan, West Bengal, and also in Madhya Pradesh in India. It is used mainly while fasting. It is also ideal for babies and kids.
Nutritional benefits of sabudana for adults:- Rich in carbohydrates, mainly starch
- Contains very low amount of fats. Thus it can be also used as a food for sick or weak persons to gain weight ideally without excess fat in the body
- Boosts energy and thus is ideal dish for breakfast

Sabudana khichdi recipe for babies and kids:
Though green chillies and ground nuts are usually added in the traditional sabudana khichdi, I have customized the recipe for babies and toddlers. For 10m+ babies, you can add powdered ground nuts though.
For babies below 1 year, salt and sugar should be avoided completely. Hence I have kept those ingredients optional.
For toddlers above 1 year, you can add green chillies, powdered ground nuts, coriander leaves and serve it with curd.
Sabudana khichdi recipe for babies and toddlers - preparation method:
Wash and soak sabudana overnight till it becomes soft. Drain the excess water the next day.
Heat oil in a pan and add cumin seeds. Add the finely chopped potato. Once its cooked, mix the other ingredients except sabudana. Let the ingredients cook well.
Add the drained sabudana and the dry powders. Stir the sabudana every 6-7 minutes until its cooked perfectly turning semi or full transparent.
Mash the sabudana khichdi before giving it for babies.
Notes:
- While soaking sabudana, don't forget to drain excess water otherwise sabudana turns sticky while and after cooking
- For toddlers you can add green chillies, salt, sugar and groundnuts in this recipe
- You may even add other vegetables if you like to increase its mineral and fiber content, although classic recipe go with only potatoes
- Cook the dish in low flame to get evenly cooked soft sabudana khichadi.
