If you've stopped by and noticed a few changes, that's because things have been looking a bit different on the site. I'm finally going through the redesign I've been constantly mentioning I'd get to. I can't wait to reveal a brand new site and blog that will reflect the goal and look I've envisioned for Dreamery Events. Blog posts may be few until the end of the month, while some of the backend issues are resolved, it just means I'll have plenty more pretty, creative and delicious things to share with you. But it is one very important day, and there was no way I was passing on the chance to share three of the most amazing recipes for s'mores. It is worth the afternoon break, everyday, in order to drift off to dessert heaven with these S'mores....I could really f** go for these s'mores right now, sorry for the language but these s'mores will make girls say the darnest things. You'd surprised to know that I did resist the urge to devour a few as I wrote this, but I'm heading to Lake George in two weeks and I just want to feel my best. But let me tell you, these s'mores made with cookies, and whatever amazingly delicious creation you want, these are probably my favorite dessert on earth!
These are simple, perfect for summer or bringing the summer vibes indoors during the winter. And these s'mores are totally customizable with whichever favorite homemade cookies you love. I used my three classics; chocolate chip because there isn't anything greater, sugar, which I instantly tasted salted caramel with, and these popular candied walnut cookies for a take on chunky monkey.I'm obsessed with marshmallows, if a sweet treat has it, most likely I will enjoy it. And this summer, along with watermelon and a light potato salad, that I can't wait to share with you, marshmallows have been my go-to summer food. I blame it on the kid's cooking camps I was running a few weeks ago, where every class had marshmallows in their mystery baskets for Chopped. Yes, we finish our weeklong cooking camps by letting the kids get creatively inspired in the kitchen and compete like on the show. So I ate a lot of marshmallow, which I didn't mind, with chocolate, popcorn, caramel, apples, it was all delicious, but nothing gets me more than a S'more! The classic is good with graham crackers and chocolate square, but I've always preferred my s'more on the more creative side. Personally I love it with dark chocolate and cookies, especially a chocolate chip. I couldn't let one of my favorite desserts' holiday go by without making up some tasty recipes to celebrate. The Salted Caramel version is the closest to the original, but it's even more special. Caramel should always go on S'mores!
I actually used ganache for these S'mores. Yes, you read that correctly. Go ahead and use your favorite chocolate bar if you'd like, but since I only had chips, I remembered the leftover ganache saved in the fridge. Once cold, the chocolate sauce becomes the perfect spreadable chocolate layer.
And have you seen the size of these marshmallows?! We're definitely go large with the jumbo. They're how big they should be for these cookie sandwiches.
Salted Caramel Sugar Cookie S'mores
Ingredients {Makes 8 to 10 sandwiches}
Classic Sugar Cookies, recipe here or use your favorite
1/4 cup - Dark Chocolate Ganache {or your Favorite Chocolate Bar}
1 bag - Jumbo Marshmallows
about 1/4 cup - Salted Caramel, recipe here
Warm the cookies slightly. Spread a layer of the chocolate ganache onto one cookie, a drizzle of the caramel and then top with the toasted marshmallow. Drizzle a bit more caramel atop the toasted marshmallow, and finish with the other cookie. Enjoy right away!
I call this the Chunky Monkey S'more! This flavor combination is probably eaten daily. Bananas are my go-to and I'm serious when I saw I don't go a day without peanut butter. What better way to play up the combination by using a nut cookie. These comforting walnut cookies are the perfect addition to creamy peanut butter, decadent ganache and a crispy fluffy marshmallow. Can you tell these were my favorite of the bunch...
Chunky Monkey S'mores
Ingredients {Makes 8 to 10 sandwiches}
Candied Walnut Cookies,
1 to 2 - Bananas {thinly sliced into oblong slices}
1/4 cup - Dark Chocolate Ganache {or your Favorite Chocolate Bar}
1 bag - Jumbo Marshmallows
about 1/4 cup - Peanut Butter {I used an organic version that was a bit more creamier, but use which you prefer}
Warm the cookies slightly. Spread a layer of the chocolate ganache onto one cookie, a drizzle of peanut butter and then top with the toasted marshmallow. Drizzle a bit more creamy peanut butter atop the toasted marshmallow, and then top with the other cookie. Enjoy right away! There isn't a dessert quite as classic, and heavenly, as a really good chocolate chip cookies. I feel like it's almost a requirements S'mores should be made with chocolate chip cookies, you're tasty graham, but s'more sandwiches are just a bit better when there's soft chocolate in overbite.
Are you going away for a long weekend, or camping? Bake a few batches of your favorite cookies, then pack up all the gourmet fixings to have when you hit the road. I'm definitely on packing a lovely S'mores spread for our trip to Lake George. These are a great dessert for a crowd, or a lazy Sunday afternoon for two. Ingredients {Makes 8 to 10 sandwiches}

1/4 cup - Dark Chocolate Ganache {or your Favorite Chocolate Bar}
1 bag - Jumbo Marshmallows
Warm the chocolate chip cookies slightly just until chocolate pieces begin to warm and melt. Spread a layer of the chocolate ganache onto one cookie, then top with toasted marshmallow and then the other cookie. Enjoy right away!
