Rocky Road Bars

Biscuits, marshmallows, crispies, chocolate then covered in chocolate in bar, is something that would have come from the US, and yes like magic it was created in the US, originally in ice cream form back in 1929 by William Dreyer. However now you get bars, brownies, ice cream and it is the perfect way to use up some left over chocolate, marshmallows, cereal and biscuits.

To be honest, you could actually make these to your taste, if you like nuts them throw some in, and believe or not I've made these before with roasted salted nuts and it really adds great flavour to the bars, the reason I didn't do it this time is there might be risk that I might demolish them all! Not a risk my thighs need to take! 🙂

I do now see these bars or a variation of them in most coffee shops from Costa to Starbucks, and when they charge something like £2 per small piece, you can understand why it's so much better to make it your self, specially when you see how easy it is. This is one of those bish, bash, bosh type recipes where it's easy to add what ever you might have in your cupboard.

After a long day, some times you just need a small little bar to nibble on while watching TV when the kids are asleep. The Rocky Road bars have the indulgent chocolate, soft marshmallows and crunch from the biscuits and crispies which gives it a great texture and deliciousness.

Ingredients:
170g Mixed Sweet Biscuits
50g Marshmallows
30g White Chocolate
30g Mini Smarties
30g Reases Pieces
30g Milk Chocolate
50g Rice Crispies
200g Dark Chocolate
150g Butter
2 Tbsp Cocoa
2 Tbsp Golden Syrup
2 Tbsp Sugar

Break up sweet biscuit like digestives, rich tea, nice, etc into smaller chunks

Mix in marshmallows, white and milk chocolate buttons, rice crisps, reases pieces and mini smarties to the biscuits.

Mix well

In a separate bowl ass butter, sugar, chocolate, cocoa powder and gold syrup to a microwave proof bowl.

Heat for 30 seconds at a time in the microwave, stirring in-between until fully melted.

Pour the melted chocolate mixture into the dry biscuit mix bowl, stirring well until everything s coated in the chocolate.

Spoon the rocky road mixture in a grease square dish, slightly press down and level out the rocky road mixture.

Chill for at least 4 hours in the fridge, then sprinkle with a little icing sugar.

Slice with a warm knife into smaller squares and enjoy.
