Roasted Vegetable sauce{For Pizza/pasta/dip}

I always prefer fresh condiments homemade with quality ingredients to the store bought sauce/jam etc.Even when I make pizza/pasta I always try to use fresh homemade sauce.So every time I make them I try to change the recipe or tweak a recipe here and there to get a different taste.This slow roasted vegetable sauce is an excellent base for any pizza/pasta dish or just use it is a dip with your bread/spread for toast.Which ever way it is used,sure it creates a magic and take the dish to one level up.Try it out and lemme know.
Roasted vegetable sauce recipe
Star ingredients:Assorted veggies and mixed herbs
Time:50 minutes(In oven)
Serves:3

Ingredients:
3 tomatoes chopped fine
1 onion sliced
1/4 cup cor kernels
1/2 cup different colored bell peppers
2 carrots chopped
1 piece pumpkin
1 cucumber
2 tablespoons oil
1/2 teaspoon sugar
Salt
Mixed herbs
Method:
1.Preheat oven at 180C.Grease a large baking dish and add all the chopped veggies to it.Add oil,salt and herbs.Mix well till coated.
2.Keep in the oven for 40-50 minutes till the veggies shrink well and leave out juice.
3.Now once cooled,puree the veggies along with juice to required consistency.
4.Use as pizza sauce or dip for bread.Store refrigerated

Notes:
1.You can add veggies like celery,zucchini etc.
2.Try adding salt and pepper instead of mixed herbs for a different taste
3.You can also add mint leaves
