Recipe: Halloumi Stuffed Peppers

Whether you’re unfamiliar with peppers or you’d like to try a new recipe that utilises them for something other than a salad ingredient, peppers are a versatile foodstuff that can be found in various bright colours, most popular being red, green, yellow and orange.

One of the best ways of serving peppers as a meal in their own right, is by stuffing them. Whether you choose to add a rice mix to the bell pepper or you choose to fill them with cheese before grilling them is completely up to you, but you will have is a sweet and healthy dish that will leave your guests satisfied.

Halloumi Stuffed Peppers

Ingredients

4 large red peppers

290g jar antipasti marinated mushrooms

50g couscous

100ml vegetable stock

250g halloumi, cubed

2tsp. parsley, chopped

Method

Preheat the oven to 200C or Gas Mark 6. Slice the peppers in half through the stalks and remove the seeds.

Drain the mushrooms. Drizzle some of the oil from the jar over the peppers and season. Bake for 25 minutes until tender.

Place the couscous in a bowl and add the vegetable stock. Leave for 5 minutes to soak. Stir in the mushrooms, halloumi and parsley. Season and add to the tenderised peppers. Bake for a further 15 minutes until the cheese is golden. Serve with salad leaves and some yummy garlic bread.

There are lots of alterations you can make to this recipe to make it a little different. Substitute the halloumi with some feta cheese for something with a Greek edge, for example. In what takes very little time, you will be able to serve some delicious and healthy stuffed peppers to your guests, either as a starter or as a main course with side orders for extra sustenance.
