Ingredients:
Puff pastry
Sugar
Cinnamon
Aniseed
Preheat the oven to 220 C / 425 F / Gas mark 7
Spread some sugar on the surface you're working on.
Roll the puff pastry out onto the sugar until it measure 30cm by 25cm.
Sprinkle some sugar on top and press it in with the rolling pin.
Sprinkle some cinnamon or aniseed on top (I did half and half to have a batch each of cinnamon and aniseed flavoured palmiers).
Roll the shorter side into the middle.
Do the same on the other side.
Glue them together with water (this didn't work for me but hey, give it a go, why dontcha).
Dampen a couple of baking trays and set aside to lay the palmiers onto.
Flatten the palmiers a little.
Shove in the oven for about 12 minutes or until they start to go golden brow.
Flip them over for a few minutes until the other side has caramelised too.
Remove and leave on a cooling rack.
