Recipe: Chicken/ Shrimp and Veggie Spring Rolls

Let's try the famous spring rolls! Ever wondered where the yummy spring roll came from? Actually, this delicious food has a long, interesting history but we'll make it short.

According to research, this savory roll was first introduced in the Eastern Jin Dynasty. Back then, people used to make thin cakes and eat it along with green leafy vegetables during the start of the Spring Festival. That is where the name " spring dish " came from. Enter Tang Dynasty, the spring dish had a little upgrade. While poor families decorate it with carrots and celery, the rich added meat, vegetables and sauces.

Fast forward to present... this savory roll has become a favorite dish not only in China but also in Indonesia, Philippines, South Korea, Taiwan and Vietnam. Each country has their own way of cooking these delicious spring rolls. You can do your own version, too!

Here's a simple, healthy, and delicious Chicken/ Shrimp and Veggie Spring Roll recipe!

You'll need following ingredients:

Spring roll wrapper
1 cup yellow pear
1/3 cup chopped peanuts or cashew
6 lettuce leaves
1 cup chicken breast (sliced thinly) or 6 pcs medium sized shrimps
12 basil leaves, cilantro or mint
½ cup bean sprouts
  1. First sauté the chicken fillet or shrimp in 1 tbsp. of oil then set aside. After few minutes, add 1 tbsp. of soy sauce, 1 tsp. tomato paste, ½ tsp. sugar and 2 tbsp. water in same pan. Cook until sauce thickens and then add the chicken or shrimp.
  2. To prepare the wrapper, dip each in water until pliable. Then carefully arrange stuffing: lettuce, peanuts, bean sprouts, basil, chicken/ shrimp and yellow pear. Fold the opposite end of the wrapper near you and then the sides. Make sure that the sides are sealed, so that the stuffing won't fall off.
  3. To prepare the dip, simply mix 2 tbsp. fish sauce, ¼ cup vinegar, 1 tsp. calamansi and ½ tbsp. sugar. Mix it and add the chopped garlic and finger chillies. And voila!
