This is another of my line of raw ‘fudge’ recipes made in my fantastic Froothie Optimum 9400.
This is not fudge as you know it. No refined sugars or bad fats in this. It’s a combination of dried fruits, some coconut butter, agave nectar and raw cacao powder. Just four ingredients whizzed up in my blender, it’s as simple as that.
I came across dried pears in my local supermarket. It was a dried fruit I’d not actually seen before and I picked up a couple of packs as I thought they would be really tasty. Then I got to thinking that pears go really well with chocolate and that is kind of how this recipe evolved.
I added the ingredients into my Optimum 9400 and they blended well with the help of the tamper tool which comes with the blender. I think most regular blenders would probably have cut out with the firmness of the fruit, but the Optimum 9400, as ever, never lets me down. I then packed the fudgy mass into a small plastic container and left it to firm up in the fridge for a few hours.
When it was set I cut it into cubes and digged in. The taste of the pear came through immediately and then the cocoa taste followed on after. I added 3 tablespoons of raw cacao powder, but if you wanted to you could 4 or 5, depending on how chocolatey you wanted your ‘fudge’.
This is a much healthier way of eating ‘fudge’ but remember that it still does contain a lot of sugars, albeit naturally occurring ones. So go easy on it, whilst you enjoy!
Here's how I whizzed it up...
