Rava is basically Semolina in gujurati/indian, and I've made a sweet fruity nut ball using all vegan friendly ingredients. I've even now sourced some vegan ghee called 'Better Ghee'. I can't find a website link, however I did post a photo on my Instagram a few weeks ago.
Semolina is a purified wheat middling of durum wheat and used in making pasta, cereals and puddings. Semolina is very versatile and can be used in sweet and savoury cooking and baking. Used widely in Eastern European and south Asian counties.
Tejal's tip: Semolina can be used to prevent sticking when baking, such as sprinkle on a little on the baking tray before baking bread or pizza dough.
The is a great diary free Diwali sweet recipe for those of you either following a vegan lifestyle like myself or have intolerance to dairy.
Ingredients
200g Fine Semolina
50g Desiccated Coconut
30g Raisins
20g Chopped cashews
100g Sugar
2 Tbsp Vegan Ghee (or butter/ghee)
165ml Coconut Milk
Pinch of Cardamom
Add ghee, raisins and cashews to a pan
Over medium heat lightly toast the nuts and the raisins will slightly fluff up.
Add the coconut milk, sugar and pinch of cardamom to the pan.
Stir until the sugar has dissolved.
Add the fine semolina and coconut to the pan
Stir well until all the semolina has been mixed, take off t heat and allow to cool
Once cool enough to handle, taking a little bit at a time make a ball in your hands and set aside to cool completely.
Store in a airtight container to keep the freshness.
