Raisin Oat Muffins

I’ve loving this new way of baking where I completely make it up! Experimenting is my new kitchen adventure at the moment.

When I started baking I would never change or adapt a baking recipe for the main part – maybe add a different flavouring but nothing drastic.

So this is the muffin version of the Oat and Raisin Cookie!

ingredients:
90ml Milk
2 Eggs
150g Melted butter
200g self-raising Flour
150g Light Brown Sugar
1 tsp Baking Powder
1/4 tsp cinnamon
1/4 tsp salt
100g Raisins/sultanas
100g Oats

Whisk together milk and melted butter

Whisk in the eggs

Add the flour

Add sugar, oats, salt and cinnamon and mix.

Fold in the raisins/sultanas

Scoop into 12 muffin cases

Bake at 170c for 25-30 minutes and enjoy
