I love to bake. I'm not great at it, but I do love it.
I don't, however, love having all of the product that results from my baking attempts around my house...if it's here, I eat it.
So, I try to give away as much as the kids and my husband will let me...good thing the girls and their kids are coming this week.
Last weekend, I googled "easy oatmeal cookie recipe." I had a bunch of oatmeal that wouldn't fit into my pantry's big glass jar, so I wanted to use it up. The following recipe came from Cooks.com...I just modified it a little according to some reviews and suggestions.
1 c. sugar
1 c. butter
1 c. flour2 c. Quick Oats2 eggs
1 tsp. baking soda (sifted with flour)1 tsp. vanilla extract1 1/2 c. chocolate chips
Preheat oven to 350°F.
Mix with hands -- form small balls and flatten on ungreased pan.Bake for 8-12 minutes* (depends on size of cookies made).*I found that I had to cook mine for like 14-15 minutes...
I was a little concerned about the 1 cup of butter...I thought that sounded like an awful lot. But, hey, I'm not a baker, so I just followed the directions. And let me tell you...these cookies are DELICIOUS. They are light, airy, soft and awesome.
They turned out really thin...like lace cookies...not like your regular old thick oatmeal cookie.I used a melon-baller to scoop out the dough...I wanted the cookies to be small. BUT, they spread out considerably on the baking sheet, so I was glad I made little dough balls to begin with.
I will DEFINITELY be making these again...in fact, I think I want to make another batch to
keep...13 days until the kids go back...the countdown has begun. I can't wait to finish some bigger projects...you know, the ones that are just too hard to do with littles around...
