I adapted this great fish stew recipe from here and it came out so well I decided to share!
Quick and Easy Fish Stew Recipe
Ingredients
- 4 Tbsp olive oil
- 1 cup of chopped onions
chopped onions, carrots and celery
- 3 large garlic cloves, chopped
- 1/2 cup fresh parsley, chopped
- 1 cup diced tomato
- 2 teaspoons tomato paste
- 8 oz of clam juice
- 1/2 cup dry white wine (I used chradonnay)
- 1 1/2 lbs fish fillets cubed (I used 2 tilapia filets)

- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1/4 cup green peppers (optional)
- 1 tsp chilli powder
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1/2 tsp lemon pepper
- 1 tsp salt
- 1/2 tsp pepper
this is the clam juice I used
Directions
- Heat oil in llarge pot or Dutch oven over medium-high heat. Add onion, garlic, carrotts, celery, and peppers and sauté´until onions are clear.
- Add tomato and tomato paste and gently cook for 10 minutes or so.
- Add clam juice, white wine,fish, simmer until fish is cooked through, less than 10 minutes.
- Add paresley and the rest of the seasonings.
- Serve immediately, or refrigerate overnight
