Those delicious filled and deepfried tortilla turnovers make a popular snack, and smaller versions make exellent canapés.
INGREDIENTS
Makes 14
14 freshly prepared tortillas
For the filling
1 cup finely chopped or grated Cheddar cheese
3 jalape�ño peppers, seeded and cut into strips
oil, for frying
salt
Have the tortillas ready, covered with a clean cloth. Combine the grated cheese and chili strips in a bowl. Season with salt. Set aside.
Heat the oil in a frying pan. Then holding an unbaked tortilla on your palm, put a spoonful of filling along the center, avoiding the edges.
Fold the tortilla and seal the edges by pressing or crimping together. Fru in hot oil, on both sides, until gilden brown and crisp.
Using a spatula, lift out the quesadilla and drain it on paper towels. Transfre to a plate and keep warm while frying the remaining quesadillas. Serve hot.
