Makes 14 Puran Poli
 

Ingredients:

 For The Dough:
  • 2 cups whole wheat flour (gehun ka atta)
  • 2 tablespoons oil or ghee
 
For The Filling:
 
  • 1 cup Bengal gram (chana dal)
  • 1 cup jaggery or to taste
  • A few saffron (kesar) strands
  • 2 tablespoon ghee
  • 1/2 tsp cardamom (elaichi) powder
 
Other Ingredients:
  • Whole wheat flour (gehun ka atta) for rolling
  • Ghee for smearing

Method:

 
For the dough:
  1. Combine the flour and oil or ghee in a bowl and knead into soft dough using enough water.
  2. Divide the dough into 12 equal portions and Cover with a damp cloth and keep aside for one hour.
For the filling:
  1. Dissolve the saffron in a little water and keep aside for 15 to 20 minutes.
  2. Wash and boil chana dal with 11/2 cup of water and pressure cook it for 2-3 whistles.
  3. Allow the steam to escape before opening the lid mash the dal lightly using the back of the spoon.
  4. Heat the ghee in a broad pan.
  5. Add the dal, grated jaggery, saffron, cardamom powder and mix well.
  6. Cook on a medium flame for 15-20 minutes or till the mixture thickens, while stirring continuously. It should resemble a soft ball.
  7. Remove and allow it cool slightly.
  8. Divide the stuffing into equal portions and roll into balls. Keep aside.

How to proceed:

 
  1. Dust it with flour and Roll out one portion of the dough into 4-5”diameter circle.
  2. Place a portion of the filling in the center and fold the edges of the dough over the filling. Pinch the edges together to seal the filling in.
  3. Flatten the dough and roll again into a 4-6" diameter circle, using a little wheat flour for rolling.
  4. Cook on a tava (griddle) over a medium flame till it turns golden brown in color on both the sides.
  5. Repeat with the remaining dough and filling to make Puran Polis.
  6. Smear a little ghee on each Puran Poli and serve hot with milk.
