Pumpkin Spice Cookie Sandwiches with Cream Cheese Filling are easy and delicious! Added white chocolate and dried cranberries make these pumpkin spice cookies outstanding.
These are not ~spooky~ Halloween-y, they’re more of just fall themed cookies, but that’s a good thing because it means you can eat these whenever you want pumpkin spice.
After grabbing one then, and a few the next day at the cookie swap, I was itching to play with the mix and put my spin on it. I loved the dried cranberries the folks from the test kitchen had added to the mix when I was visiting, and so I decided to go off that inspiration.
That cream cheese filling couldn’t be easier! The Krusteaz mix comes with a packet for icing. Instead of adding milk to make it into a glaze, I whipped it into some cream cheese. I wanted it a little thinner, so a tablespoon of milk did the trick. It tastes tangy and with the hint of vanilla – it’s the perfect filling to complement the sweet and spiced cookies.
When you take a bite of these cookies, with their bold pumpkin spice flavor, chewy cranberries, and sweet white chocolate, all melded together with that cream cheese frosting, you’ll be so impressed with how easy they were! Happy baking :)

Pumpkin Spice Cookie Sandwiches with Cream Cheese Filling- 1 package Krusteaz Pumpkin Spice Cookie Mix
- 1 egg
- ½ cup (1 stick) unsalted butter, softened
- ½ cup white chocolate chips
- ½ cup dried cranberries
- 8 oz. cream cheese, softened
- 1-2 tablespoons milk, if needed
- Preheat oven to 350°F. In a large mixing bowl, combine Krusteaz Pumpkin Spice Cookie Mix (minus the icing pouch), egg, and butter. Mix until fully combined. Add in white chocolate chips and cranberries; mix thoroughly.
- Scoop cookies onto lined cookie sheet and bake 10-12 minutes. Let cookies cool.
- While cookies cool, combine cream cheese and contents of the icing pouch until smooth. Add 1-2 tablespoons milk to reach desired consistency.
- Match the cooled cookies in pairs. Pipe or spread filling onto one of each pair and sandwich together.
