Pumpkin Spice Cake

Pumpkin spice season is here!!! Seriously, that’s what they should rename fall to: Pumpkin spice season! Everywhere I look, it’s pumpkin spice and I am loving every second of it. During this season, I am that girl that adds a little bit (or a lot) of pumpkin to everything from coffee to pasta, but I especially love baked treats with pumpkin. My favorite is this amazing pumpkin spice cake that I make that is heavenly!!

Doesn’t it look scrumptious?? It’s super easy to make also. It has a special ingredient that makes it even tastier, no not the pumpkin, it’s applesauce!! I discovered that you can swap applesauce for vegetable oil or butter in cakes and it has made all the difference. Not only do cakes come out super moist, adding applesauce makes it a “better for you” cake!! I purchased this jar of Mott’s® Applesauce from Walmart to have on hand for after-school snacks and all my fall baking!

Let’s get to making some pumpkin spice cake!!

PUMPKIN SPICE CAKEPrep and Cooking Time: 60 minutes
Ingredients (Cake):1-box French Vanilla or Yellow Cake mix½-cup granulated sugar1-tsp ground cinnamon1-cup canned pumpkin mix4-large eggs¼-cup water½-cup Mott’s® Original Applesauce
Ingredients (Glaze):½ - cup granulated sugar¼ - cup water½ -tsp vanilla extract

;Preheat oven to 350 degrees. Grease a fluted pan or a 9 x 13 baking dish. In a large bowl, combine cake mix, sugar and ground cinnamon.


To the dry mix, add pumpkin, eggs, water and Mott’s® Applesauce.

Mix well, about 2 minutes by hand or about 1 minute on your mixer.

Pour cake into greased pan and bake about 45 minutes. Check by inserting a knife in the center to see if your cake will need a little more time.

Remove from pan and set aside to cool. If using a fluted baking pan,run a knife around the edges to loosen the cake, place a plate over it and flip it around!

Isn’t she a beauty? You could easily serve your cake like this or you can add a glaze to make it even more yummy!
For the Glaze:
In a saucepan, bring the sugar, water and vanilla to a boil. Boil about 3 minutes. Remove from heat and pour over your cake!
