Pumpkin Soaked Oat Pancakes

I soaked some oats last night with the intention of making plain old oatmeal for breakfast (Henry’s favorite).  However, I discovered that I had some pureed organic pumpkin leftover from the holidays.

So I tweaked my SOAKED OAT PANCAKE RECIPE:

  • substitute 1 C. pureed pumpkin for the banana
  • use 1/3 C. honey
  • throw in way more cinnamon

Rather than using syrup we topped them with my mom’s homemade apple butter that she brought us at Christmas.

Mmmmm….delicious!
