Halloween is here and we decided to make these uber yummy and moorish pumpkin Halloween cake balls that look like mummys. They are fun and so easy to make, and using a base pumpkin cake gives that great autumn feeling.
My kitchen was rather warm when I was making these little beauties and so I did quickly put them in the fridge to help set the white chocolate cover. You can make these for any occasion as they are great bite size treats.
My son initially said we should make ghosts but as I was making ghost cupcakes I thought I would give these little balls red eyes instead of black eyes. Halloween is a great event as you can make as much or as little inspired treats. All the little trick or treaters and their parents were loving these hand-made goodie bags full of Halloween home-baked treats.
Ingredients
300g Pumpkin Puree
50ml Oil
200g Caster Sugar
400g Plain Flour
1 1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
2 Eggs
100g Cream Cheese Frosting
300g White Chocolate
Red Royal Icing
To a mixing bowl add pumpkin puree, eggs, oil and caster sugar then whisk
Add plain flour, baking powder and baking soda to the wet pumpkin mixture
Whisk until smooth
Pour into a greased baking tin and bake for 35-40 minutes at 180c
Once the cake has cooled completely, crumbled into a large bowl
Make up some cream cheese frosting and add to the crumbled cake
Taking a small scoop, roll into a ball. Place in the fridge for at least 20 minutes to chill completely.
Melt 250g white chocolate and place the ball into the chocolate to completely cover
Allow the chocolate to set - can take a few hours
Melt 50g Drizzle white chocolate over the top of the cake balls, then with a little red royal icing pipe little red eyes.
