Pumpkin Muffin Recipe.

with fall in the air and since i haven't posted a recipe in a while so i thought i'd share a really yummy pumpkin muffin recipe :) this is a single batch but i double it and it makes around 3 dozen muffins if you measure out the batter just right.
what you need:1 stick margarine at room temp3/4 cup dark brown sugar, packed firmly1/3 cup molasses1 egg at room temp1 cup canned pumpkin (not pumpkin pie mix)1 3/4 cup flour1/4 teaspoon salt1 teaspoon baking soda1 1/2 teaspon ground cinnamon1 teaspoon ground nutmeg
directions:
preheat oven to 400 degrees and either grease muffin tins or use paper liners. first, cream margarine until soft. then add the sugar and molasses. beat until light and fluffy. next, add the egg and pumpkin ad stir until well blended. sift over flour, salt, baking soda, cinnamon, and nutmeg. fold everything together - just enough to blend. do not over mix. spoon batter into muffins tins and bake until the tops of the muffins spring back lightly when touched. approximately 12-16 minutes, then enjoy!
