Pumpkin Molasses Bread

Okay I might be going overboard with my favorite flavor couple: pumpkin and molasses. But I don’t care. I’m in love, I’m in love and I don’t care who knows it! I always have a few cans of pumpkin in my cupboard from about October to January because you just never know when you might feel like whipping up a treat. This is my go-to pumpkin bread recipe, but I tweaked it a little by cutting the water and adding the molasses. It’s an easy bread recipe and I like the subtle flavor of the molasses. I have to say though, no matter how many times I try, I cannot beat my childhood neighbor Erma’s pumpkin bread. Nothing I will ever make will compare to that pumpkin bread. But, this recipe isn’t too bad either ;)

Pumpkin Molasses Bread Recipe

Makes 1 loaf, double recipe for 2 loaves
1/2 can pumpkin puree (7.5 oz)
2 eggs
1/2 cup vegetable oil
1/3 cup water
1/4 cup molasses
1-1/2 cups white sugar
1-3/4 cups all-purpose flour
1 teaspoons baking soda
1 teaspoons salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Preheat your oven to 325-degrees and grease and flour a 5×9 glass loaf pan.

In your mixing bowl, blend together pumpkin, water, eggs, oil and sugar. You can also use a stand mixer or a hand mixer for this recipe.

Next you’ll add your molasses. I measured my oil in a measuring cup and then used the same cup for the molasses so it would all just slide right out into my bowl.

Mix everything together and then whisk your flour, baking soda, salt, cinnamon, nutmeg and cloves together.

Add in batches to the wet mixture.

Before you pour your batter into your floured and greased loaf pan, use the empty pan to create a baking tent. I cut out the center using a knife and this will ensure that your edges don’t burn while the middle is cooking through.

Next, pour your batter into your dish.

Bake at 325-degrees for 60-75 minutes, inserting a toothpick or skewer at 60 minutes to see if it comes out clean. If the middle is not done after an hour, continue to check with a toothpick every 5 minutes until it’s done in the center.
