Pumpkin Cut-out Cookies for #SundaySupper

Halloween is this week. I can't believe how fast October flew by. Pretty soon it'll be Thanksgiving (and Chanukah!) and then it's Christmas, and then we'll be settling into a brand new year. Oy freaking vey.

Let's stop letting the world whizz by us and slow down a bit. It's Sunday, the best day to sit back, relax and just...be. It's also the day for #SundaySupper to take over the blogosphere, and we are celebrating the candy-crazed holiday with some Halloween-inspired recipes. What's a Halloween party without some Pumpkin Cut-out Cookies? Even better if they are flavored with yummy pumpkin spice and decorated with funHalloween-colored sprinkles in orange, black and purple. I don't know when purple became a Halloween color, but it seems to always be included. Maybe it has some kind of eeriness to it? I don't know. But for some odd reason, it works.


Have you ever used pudding mix in your cookies? It is a great way to add flavor and makes your cookies really soft and chewy. Jell-O makes a limited edition Pumpkin Spice pudding mix only available around the holidays, so of course I had to buy some! The pumpkin spice really does stand out, and added cinnamon gives even more flavor. I used a small pumpkin cookie cutter to make these adorable little cookies, perfect to bring to today's #SundaySupper Halloween Party!



Pumpkin Cut-out Cookies

1/2 cup butter (1 stick), softened
3/4 cup brown sugar
1/4 cup white sugar
1 packet Jell-O Pumpkin Spice pudding mix
2 eggs
1 tsp vanilla extract
2 1/4 cup all-purpose flour
1 tbsp cinnamon
1 tsp baking soda
Cream together the butter and sugars until combined. Add in dry pudding mix. Add the eggs and vanilla extract. Add flour, cinnamon and baking soda and mix well. Chill the dough for at least a half hour.
Preheat the oven to 350 degrees.
Roll out the dough on a flat surface and use your small pumpkin cookie cutter to cut out your cookies. Place the cookies on a lined baking sheet. Break out all your Halloween-themed sprinkles to decorate the cookies. Bake for 8 minutes.
