Before the new year rolls on in, I think I should post a delicious sweet treat recipe. You know, before all that its a new year I’ve got to lose all this weight starts happening.
This is a delicious crunchy oatmeal square recipe, that will make you’re house smell so darn good. This is also a great snack for lunch boxes and for a hike.
PUMPKIN AND FLAX SEED OATMEAL SQUARES - 18 squares
Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 cups rolled oats
- 1 1/2 cups flaked dried coconut
- 3/4 cup sugar
- 4 tbsp golden syrup
- 1/2 cup margarine
- 1 tsp baking soda
- 1/4 cup boiling water
- 1/4 flax seeds
- 1/4 pumpkin seeds
Directions
Preheat the oven to 150 degrees C / 302 F.
In a large bowl combine the flour, rolled oats, coconuts, sugar, flax seeds and pumpkin seeds.
In a separate bowl combine the margarine and golden syrup. Melt in a microwave ( just a couple of seconds). Add the boiling water and baking soda to the margarine. Stir well.
Pour the wet ingredients into the dry ingredients and stir well.
Press the mixture into a well greased pan ( 20cm x20cm) and bake for 20 minutes.
When light brown remove from oven and cut into squares. Switch off the oven and return the squares to the oven. Let them dry out in the oven for 10 minutes. Cool before removing from tin.
