Potato rice recipe is a easy fuss free one pot meal that you could make with very few ingredients.Rice,potato,onion,chilli powder,turmeric powder,yeah that's it,just 5 ingredients apart from usual urad mustard tempering.The main flavor and taste of this potato rice comes from the generous pinch of turmeric powder,this is my all time favorite rice which we used to have very often.Do not omit onion in this recipe,as slightly caramelized onions add a brilliant flavor to this recipe,but if you should avoid onions,add asafoetida while tempering and add a pinch of garam masala or coriander owder along with turmeric powder.This potato rice is very suitable for kid's lunch box,you can pack this along with some fryums and raita for school lunch.This potato rice can come very handy when you do not have muh of ingredients to prepare a lavish lunch as potatoes and rice will be a pantry staple in many homes.Here is how the recipe for easy potato rice.

Potato rice recipe:
Star ingredients:Potatoes
Time: 30 minutes
Serves:3

Ingredients:
1 1/2 cups basmati or normal raw rice
2 large potatoes
1 large onion
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
1 teaspoon mustard seeds
1 teaspoon urad dal
Salt
Oil
Method:
1.Wash and soak the rice for 30 minutes.Cook with enough water so that the grains are completely cooked yet separate { Refer this post for pointers}
2.Was and scrub the potatoes well.Chop finely along with skin.Peel and slice the onions.
3.Heat a kadai and add 2 teaspoons oil to it.Temper with mustard and urad dal.
4.Add onions and saute till slightly browned.
5.Add the chopped potatoes,chilli powder,turmeric powder,salt and saute well.Keep sauteing at regular intervals until potato is evenly cooked,for around 10-15 minutes.Sprinkle some water if needed.
6.Once the potato is cooked,add the cooked rice and mix gently.Serve with raita
Notes:
1.If packing for kids lunch,you may add 1 teaspoon ghee after mixing the rice with potatoes.
2.Make sure to chop the potatoes finely to ensure even cooking.
3.Do not add more water while cooking potatoes,as they may turn soggy.
