Pork and Pineapple Rice Bowls

I am a huge fan of EveryPlate, the meal subscription service. I’ve tried Blue Apron and HelloFresh (the parent company of EveryPlate) and my favorite is definitely EveryPlate. I like that it is a very affordable option and that the recipes are not super involved and the ingredients are easy to work with. I’ve had some recipes that I’ve selected more than once because we like them so much and these pork and pineapple rice bowls are a big hit in our house. 

After ordering it several times, I decided to recreate the recipe myself so that we could make it whenever we want and also make enough to have leftovers. I realize the ingredients list looks long, but a lot of the items are spices or pantry items you probably already have! If you have any questions about substitutions, ask me in the comments.

Pork and Pineapple Rice Bowls Ingredients

3/4 cup white rice; uncooked
1 & 1/4 cup water
1/4 teaspoon ground turmeric
1 lb. ground pork
1 jalapeno; seeded and chopped
2 cloves garlic; chopped
1 packet taco seasoning (if you don’t have any, see below!)
1/4 cup water
1/2 can pineapple chunks + 1/4 cup juice 
Olive oil
Salt
Pepper

Taco spices (if you don’t have a seasoning packet on hand)
1 Tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon onion powder
1 teaspoon kosher salt

For the sauce (optional)
1/4 cup greek yogurt
1 teaspoon of taco seasoning packet (or a pinch of each seasoning listed above)
1/2 to 1 teaspoon lime juice (depending on your taste)
Pinch of salt and pepper

Pork and Pineapple Bowl Recipe

First, get your rice in a mesh strainer and rinse it until the water runs clear. This is a step that EveryPlate always suggests for rice and I do think it makes the rice cook well every time! Once rinsed, add the rice to a saucepan with 1 & 1/4 cup water. Add 1/8 teaspoon of turmeric and a large pinch of salt.

Turn on high and bring to a boil. Once boiling, cover the pan and turn to low and cook for 15 minutes. After 15 minutes is up, remove from heat and let it sit for another 10 minutes.

While your rice is cooking, add a drizzle of oil to a skillet on medium heat. Add your chopped jalapeno pepper and minced garlic and cook for 1-2 minutes until it the pepper starts to soften. 

Add your ground pork and a generous amount of salt and pepper. Cook until pork is cooked through, about 5-6 minutes.

Once your pork is cooked through, add your pineapple and cook until warm, 1-2 minutes.

Add in your taco packet, saving 1/4 teaspoon for your yogurt sauce, and stir to coat. Reminder, if you don’t have the seasoning packet, just use the spices listed above in the ingredients! Cook for another minute. Then add in 1/3 cup pineapple juice and 1/4 cup water. Simmer until sauce is thickened, about 2 minutes. 

To make the yogurt sauce, just combine yogurt with a teaspoon of your taco seasoning packet and lime juice. Stir and add enough water to make it drizzling consistency. 

Fluff your rice with a fork, top with pork and pineapple mixture and then drizzle some of the yogurt sauce on top.

  • 1/2 can pineapple chunks + 1/4 cup juice 
  • Olive oil
  • Salt
  • Pepper

  • 1/2 teaspoon smoked paprika

Directions
  • Step 1 Remove the seeds and membranes from your jalapeno.
  • Step 2 Finely chop garlic.
  • Step 3 Rinse rice in a mesh strainer until water runs clear.
  • Step 4 Add it to a saucepan with 1 cup water and turmeric.
  • Step 5 Bring to a boil, cover and reduce heat to low and cook for 15 minutes.
  • Step 6 Remove from heat and let sit covered for 10 minutes.
  • Step 7 Add a good drizzle of olive oil to a skillet on medium-high heat. Add your chopped jalapeno and garlic. Cook until fragrant, about 2 minutes.
  • Step 8 Add your ground pork and cook until done, about 5 minutes.
  • Step 9 Add your pineapple and taco seasonings, warm through. About 2 minutes.
  • Step 10 Add the water and pineapple juice and turn to simmer for 2 more minutes.
  • Step 11 Mix your yogurt, taco spices, lime juice and a pinch of salt for yogurt sauce.
  • Step 12 Fluff your rice with a fork and divide between two bowls. Top with pork mixture and a drizzle of yogurt sauce.
