Pizookie & Banana Choc Chip Ice Cream

By Tejal Hewitt @Tejal_x

Have you ever heard of a Pizookie?! Well it's like a cookie pizza with ice cream served warm. BJ's Grill and Bar in California serve the original version, so I decided to re-live this creation for me kids and husband with slightly creative version.

Pizza Hut in the UK now do a similar version called the Cookie Dough dessert with different cookie options. This is definitely an indulgent dessert so make sure you go for a run before hand!

The Cookie dough below makes 2 portions, so you can bake half and leave the half in the fridge for a treat in a few days.

There is nothing more satisfying than making your own ice cream, as you know exactly what went into it, making healthy switches for things like sugar for condense milk and no yolks. You don't need an ice maker, but if you use one makes it easier to scoop a month later as no ice crystals form.

Ingredients - Ice Cream
600ml Double Cream
1 Can Condensed Milk
2 Ripe Bananas
2 Tsp Banana Flavouring
150g Rough Chopped Milk/Dark/White Chocolate

Ingredients - Cookie Dough
130g Margarine
60g Soft Brown Sugar
100g Dark Brown Sugar
1 Egg
1 Tsp Vanilla
1 Tsp Baking Powder
1/2 Tsp Salt
200g Plain Flour
100g Chopped Chocolate

Add double cream, condense milk, banana flavouring and bananas to a mixing bowl.

Whisk for about 2 minutes, do not let it thicken up.

Turn on the ice making then slowly pour in the banana cream mixture.

Add chopped chocolate into the ice cream maker after 5 minutes.

Ice will take about 40 minutes and will be creamy, frozen and you will be able to scoop it.

For the cookie, add the margarine and sugars to a mixing bowl.

Add the egg and vanilla to the mixing bowl and mix well.

Add the baking powder, salt and flour and beat until mixed in.

Stir in the chopped chocolate.

Spread half of the cookie dough mixture to a greased pie dish.

Bake in the oven at 170c for about 15-20 minutes until its slightly golden on top but still a bit soft and squidgy.
