Pesto Pasta Salad

Hi Gorgeous! Another one of my loves is food–yes I’m a foodie so I thought it would be fun to share some awesome recipes that I have found. I hope you all enjoy this post at stay tuned for more foodie posts.

Pesto Pasta Salad

Ingredients:

  • 8 ounces of cooked, drained and cooled orrechiette pasta
  • 3/4 cup of ricotta
  • 2 cloves of minced garlic
  • 1/4 cup of olive oil
  • 1 cup of basil, chiffonade (cut into long thin strips)
  • 1/2 cup of grated parmesan
  • 1/2 cup of toasted pine nuts
  • 1 1/2 cup of halved cherry tomatoes
  • salt and pepper

Directions:

  1. In a large bowel, combine the orrechiette with the ricotta, garlic and olive oil.
  2. Stir until the ricotta lightly coats the pasta
  3. Add the remaining ingredients and gently combine
  4. Season with salt and pepper to taste.
