Pesto Pasta Salad
Ingredients:
- 8 ounces of cooked, drained and cooled orrechiette pasta
- 3/4 cup of ricotta
- 2 cloves of minced garlic
- 1/4 cup of olive oil
- 1 cup of basil, chiffonade (cut into long thin strips)
- 1/2 cup of grated parmesan
- 1/2 cup of toasted pine nuts
- 1 1/2 cup of halved cherry tomatoes
- salt and pepper
Directions:
- In a large bowel, combine the orrechiette with the ricotta, garlic and olive oil.
- Stir until the ricotta lightly coats the pasta
- Add the remaining ingredients and gently combine
- Season with salt and pepper to taste.
