Let me tell you a bit about Lindsay. At the age of 16 she started working for the Montages Hotel in Laguna Beach, CA doing cheese and wine pairings. She became really interested in the history and taste of the cheese and took her skills to Sundance Resort in Utah and soon began hosting her own wine and cheese classes and catering to different events and private functions. Most recently she took her skills to Oxford, England at the famous Oxford Cheese Company. She and her family just moved back to California where she's started back up with her company, Fromage S'il Vous Plait, teaching classes and hosting cheese pairing events. Lindsay knows her stuff and I'm so glad to have her here today!

Point Reyes Blue Cheese served with Dark Chocolate

This is one of my favorite blues! It is creamy and sweet and has that knock out blue flavor every blue cheese lover is after. It is made with raw milk and is from happy California cows. Chocolate you ask? Yes! Chocolate and blue cheese melt at the same rate in your mouth and the bitter, creamy, and sweet flavors found in both the cheese and chocolate marry into a little treat for your taste buds. I used Cocoa Parlor Chocolaterie's Strawberry Mermaid 67 Chocolate Bar which has dried strawberries and topped it off with some edible gold leaf (get it here!). To die for!
Pairs with Rondel Brut Cava. This Spanish Sparkling Wine is crisp and refreshing with nutty notes. It with lighten up the blue cheese and the wine sits for a while on the palate, so it wont be totally over powered by the blue.
