Peanut Butter Oatmeal Cookies (Gluten Free)

These Peanut Butter Oatmeal Cookies are incredibly soft and naturally gluten-free. This simple recipe will become a quick favorite for any peanut butter fans.

It’s always fun for me to experiment with super unique and different recipes, but sometimes, I just want to make something homey, warm, and comforting. Cookies usually do that for me. The ritual of making cookies always reminds me why I love baking, and it’s even better when you can make the dough with the basics: a bowl and wooden spoon.

I’m constantly using my stand mixer and subsequently doing a whole bunch of dishes, but for this recipe, you can skip it. A little elbow grease is all you need!

The ingredients are super simple and come together super quickly. This recipe only uses a bit of butter, with the rest of the fat coming from the peanut butter. To sweeten, I used a combination of sugars. Light brown sugar to keep the cookies moist and chewy, and Nektar Honey Crystals, which are a granulated form of honey (AKA, honey without the mess!).

The honey crystals seriously taste just like honey, and I love the honey flavor combined with the peanut butter. Nektar Honey Crystals are available at Walmart. If you want to someone you love to try honey crystals, send them a honey-gram for Valentine’s Day! I love trying new sweeteners, and the granulated honey trend is definitely one I can get behind.The cookies don’t have any flour at all – oats are the main “bulk” of the recipe. Make sure you’re using certified gluten-free oats if you’re gluten-free or serving these to anyone who is! After the dough comes together, I like to put it into the fridge for at least 20 minutes. It’s not entirely necessary, but it helps hydrate the oats, making the cookies chewier, and it makes the dough easier to work with.

If you’d like, you can toss in some chocolate chips (I must admit, I was tempted to), but I loved the simplicity of these cookies. They’re nothing fancy, but they’re nothing short of delicious either. Enjoy!

  • 2 tablespoons unsalted butter, softened
  • ½ cup peanut butter
  • ½ cup light brown sugar
  • ¼ cup honey crystals
  • ½ teaspoon baking soda
  • 1½ cups gluten-free rolled oats
  • 1 egg
  • 1 teaspoon vanilla
Directions
  1. Preheat oven to 350°F.
  2. In a bowl, stir together the butter, peanut butter, light brown sugar, and honey crystals until completely combined. Stir in the egg and vanilla and mix well. Add the oats and stir until combined.
  3. Refrigerate the dough for at least twenty minutes or up to 2 days.
  4. Using an cookie dough scoop (or your hands!) make 1-tablespoon sized balls and place on a parchment lined baking sheet.
  5. Bake until cookies are just set on the top, about 9-11 minutes. Let cool on the baking sheets for five minutes before transferring to a wire rack to cool completely.
