I'm all about the quick and easy meals. And even better than quick and easy is lack of ingredients. Recipes with 5 or more ingredients are just too much for me to handle when I have to stop every five minutes to get someone juice, break up a fight, or find Spiderman. So we like to keep it simple around here.
But simple is sometimes better! And sometimes, the best dishes I make are ones that I make up as I go. I'll have to use an ingredient up before it goes bad or I haven't made it to the store in three weeks (hello mom life), so there are times when I need to get creative.
There are two things my family loves; ranch dressing and chicken fingers. So a lot of the times, I bread chicken with Progresso Bread Crumbs or Panko Crumbs and throw it in pasta, salad, whatever. And normally I dip it in flour, egg, and then the breadcrumbs. But then sometimes, I like to get fancy...
Meet Ranch Panko Chicken.
Ingredients:
4 thinly sliced chicken breasts1/2 cup Progresso Italian Panko Crispy Bread Crumbs1/2 cup Progresso Italian Bread Crumbs1 cup ranch dressing1/4 cup Parmesan cheese Mozzarella for topping
Step 1: Preheat over to 400 degrees F.
Step 2: Dip the chicken in ranch dressing. Use fat free or light if you'd like... this is what I had.
Step 3: Mix bread crumbs, Panko bread crumbs, and parmesan cheese. Dip chicken in mixture.
Step 4: Heat oil and brown chicken in skillet. Don't use too much or your breading will fall off (learned that the hard way...)
Step 5: Cook in over for 20 minutes or until no longer pink in middle. I used super thin chicken breasts as well.
Step 6: Optional: since my breadcrumb mixture was falling off from browning it in too much oil, I dipped it a new mixture of solely Panko crumbs. I let it cook in the over for another 10 minutes or so.
Step 7: Sprinkle Mozzarella cheese and put under broiler for 2-3 minutes.
I served with rice and green beans because we had pasta the night before, but this would be awesome over pasta with Alfredo sauce and peas and mushrooms. Or any pasta mixture you care to make up! It would also be delicious on salads too.
