Panko + Pecan-Crusted Chicken

This recipe is a tasty and healthy alternative to greasy fried chicken.  Serve with your favorite salad, and it makes a perfect spring supper! I made 8 chicken breasts, so we could take them for lunch all week long. 


Ingredients8 boneless, skinless chicken breasts2 cups panko bread crumbs 3/4 c fat-free grated Parmesan cheese1/2 c pecans, ground (I used my coffee grinder) 1/4 c fat-free mayo 3 tbsp Dijon mustard 3 tbsp fresh lemon thyme 1 garlic clove, crushed1/4 tsp salt 1/2 tsp black pepper 
DirectionsPreheat oven to 375 degrees.In a small bowl, mix together mayo and mustard.In a medium bowl, mix bread crumbs, cheese, pecans, thyme, garlic, s+p. Rinse chicken under cold water and pat dry.Coat chicken, one at a time, in the mayo mixture.Press into bread crumb mixture -- covering each breast thoroughly. Place in 9x12 baking dish. Cook uncovered for 20 minutes, or until chicken is cook through.
