Another new creation – now I had many ideas and ask the kids what they prefered – here were the choices! Paneer in pastry like a pie, Paneer in a pocket like a calzone or Paneer in yorkshire puddings…..
They picked to have the paneer in a pocket! Then came more decisions on what type of dough? So I decided to use a basic wholemeal pizza dough recipe.
These are great quick ( Only took me about an hour) to make these little vegetarian guys! Perfect way to get in all the food groups into a meal with protein, dairy, healthy carbs and vegetables! Now if I was food retailer I would sell these kid friendly pockets in my freezer section!
Ingredients:
200g Whole meal flour
1 Tsp Yeast
1 Tsp Salt
1 Tbsp Olive Oil
150ml Water
Onion
Pepper
3 Garlic cloves
Rapeseed Oil
200g Paneer
1/2 Can Sweetcorn
1 Tsp turmeric
1 Tsp Chilli Powder
1 Tsp Ground coriander
1 Ts[ Ground Cummin
1/2 tsp Salt
1/2 Tsp Sugar
Add whole meal flour, yeast and salt to a mixing bowl and mix all the dry ingredients together
Add the oil and warm water and mixed until forms a dough, knead for a further 3-5 minutes.
Cover with cling film and allow to prove for a minimum of 30 minutes in a warm place.
Mean while, heat some oil and add minced or chopped garlic and fry for about a minute.
Stir in the onions and pepper and cook for a further minute.
Stir in paneer and continue to fry for another 1-2 minutes.
Add spices and sweet corn
Stir in and allow to cook for 10-15 minutes.
The dough will have increased in size ( 30 mins – about 1 1/2 the size and 1 hour 2x the size) Ideally you want to allow to prove for an hour, but I was running out of time as my daughter had football training so allowed it to prove for only 30 minutes.
Knead and knock out the air, divide into 8 pieces.
Roll out each dough piece on a floured surface until a few millimeters thick.
Add the paneer filling
Fold over the dough and crimp together to seal.
Place onto an oiled baking tray and spray a little oil on the pockets.
Bake for 10-15 minutes at 220c until the pocket is browned.
Serve hot
