Ingredients:
200ml Milk
Egg
225g Plain Flour
3 Tsp Baking powder
Pinch Salt
20g Sugar
40g Melted butter
Oil to cook
200g Blackberries
100g White chocolate
300ml Cream Fraiche
2 Eggs
50g Sugar
1 Tbsp flour
In a bowl add milk, flour, baking powder, egg, sugar, salt and melted butter.
With a whisk stir all together, and be careful not to over beat as the pancakes will come out tough. The batter maybe slightly lumpy.
Cook the makes on medium heat in a slightly oiled fry pan. Flipping until both sides are cooked.
Allow all the pancakes cool for a few minutes.
Tear into small pieces half of the pancakes lay in an oven proof dish
Tear up the remaining pancakes and evenly lay in the dish
Scatter the blackberries evenly over the top of the 2nd layer of pancakes.
Add the white chocolate chunks over the blackberries
In a bowl add the cream fraiche, sugar, eggs and flour
With a whisk mix together.
Pour the cream fraiche mixture over the pancakes and berries slowly, and it will seep down into the cracks, fully cover the and sides of the pancakes and berries.
Bake in the oven at 180c for 25-30mins until golden brown.
Serve within minutes, either alone or with ice cream.
