Paleo Superfood Smoothie Bowl
This Paleo Superfood Smoothie bowl is my go to recipe when I need to break out of a run of Rise & Shine smoothies, which I normally make in the mornings. While
I like to call it the Justice League Soup because the color and power of the foods involved display great, bright colors, like superheroes do. It is a combination of both, fruits and vegetables, that will give you the servings per day that you need without having to eat a salad, or stick an apple in your mouth. You can top the smoothie with whatever you like. I like to add various berries (including goji berries), bee pollen, nuts and/or seeds; whatever I have on hand.
For this recipe check out what you need from a specialty store, such as Thrive Market or Trader Joes or any other health food store:
- Acai powder (I like this brand)
- Freeze-dried fruit (optional) or fresh fruit, if you choose
- Raw honey
The technology that you will need will be:
BlenderRefrigerator
Bowls
Must include:
Ice cubes- So do not start until you are sure you have those–or else you will not be very happy. You will need about 4-6 cubes.
Grocery items:
1 cup of mixed, fresh or frozen berries (I am using cranberries, strawberries, blueberries, and goji berries)
Coconut milk (just enough to humidify the blend, increase this if you want a more traditional smoothie texture)
1 tbsp almond butter
¼ raw honey (optional, to taste)
1 cup of chopped spinach
Acai powder (just a teaspoon)
Procedure:
Mix all ingredients until it all gets smooth. The coconut milk and raw honey are for you to flavor and wet the soup. Add slowly, and keep tasking to make sure it is reaching your desired consistency.
Remember that this is supposed to be a soup. Do not let it get too icy, or too milky. Pulp is what you are looking for, like a creamy fruit paste to be enjoyed.
Alternatives:
- Add avocado to the ingredients for more nutrients, flavor, smoothness, and for the good fats it brings.
- Add pomegranate juice to the ingredients
- Top with coconut flakes, almonds, and bee pollen.
- Slice avocado on top of the soup to make it extra savory.
- Acai powder is mainly for flavoring and to add nutritional value. It is, however, optional
This is meant to be a beautiful concoction that will have a beautiful, deep purple or red color.
Practice the decorating by keeping the slices of fruit, almonds, dried fruit, or even avocado, toward the center of the bowl. Enjoy!
