How To Make Bharta
Aubergines or eggplant as they are known in some places is one of my favorite vegetables to work with. I just love the flavor and texture of these. Bharta is the Indian version of Baba Ghanoush and is the perfect side dish in my opinion squirted with a lot of lemon juice to bring the flavours out.

Ingredients
- 500 g aubergines
- 2 tbsp coconut oil
- 1 large onion (finely chopped)
- 1 clove garlic (crushed)
- 1 green chilli (chopped)
- 4 x 3 finger pinches coriander powder
- Small bunch of coriander leaves (chopped)
- Salt
- 1 tbsp lemon juice
Method
- Cook aubergines in a preheated oven 180C / 350F / Gas mark 4 till soft, this takes around 30 mins.
- Wait till cool, scoop all the flesh into a bowl and beat with a fork.
- Heat oil, fry onion, garlic and chilli in a pan till onions are soft but not coloured.
- Add coriander powder and fresh coriander with salt followed by the aubergine pulp.
- Stir well and fry for 2 minutes uncovered and then drop the heat and simmer covered for 5 minutes.
- Sprinkle with lemon juice, serve and enjoy!
Serves as a side
