How To Make Murgh Mussalam

This rich Mughal Feast may look like a lot of work but its surprisingly easy to make and sooo worth it. Give it a try, this is worthy of a feast.

Ingredients


  • 2 onions
  • 2 cloves garlic
  • Small piece of ginger
  • Small sprinkle of poppy seeds
  • Small sprinkle of peppercorns
  • 300 g coconut milk yoghurt
  • 2 x 3 finger pinches garam masala
  • Salt
  • 1.5 kg Chicken (oven ready)
  • 125 g cauliflower rice (or more if you want)
  • 3 tbsp coconut oil
  • 3 finger pinch chilli
  • 50 g sultanas
  • 50 g almonds

Method


  1. Blend onions, garlic, ginger, poppy seeds, peppercorns and 150 g of the yoghurt into a paste. Stir in the garam masala and add some salt to taste.
  2. Slash the chicken all over and cover with this paste. Set aside for an hour.
  3. Heat 1 tbsp of the coconut oil and fry the cauliflower rice for about a minute. Add chili powder, sultanas, almonds. Once the cauliflower rice is cooked, set aside to cool.
  4. Stuff the chicken with the cauliflower rice mixture from (3). Sew up both ends.
  5. Now heat remaining coconut oil (2 tbsp) in a large pan. Add chicken on its side. Pour in any remaining marinade and some water. Bring to a simmering point and cook for an hour. Make sure you turn over halfway through.
  6. Add the yoghurt a tablespoon at a time till all is absorbed.
  7. Cook till chicken is tender, this will take a further 15 to 25 minutes.
  8. Enjoy!
