While I don’t encourage people to constantly indulge in paleo desserts, however it is fun to enjoy all the joys of dessert with none of the guilt on occasion.

Paleo eaters eliminate the guilt of dessert by adding  “the good stuff”: a power punch of nutrition and junk-free goodness. This really is possible with Paleo desserts. These delicious apple cider donuts are a delectable treat for any occasion.

As you may know, Paleo practitioners do not consume certain starches or processed products. Our flour is nut-based. These donuts are made with coconut flour. Almond flour, for example, is another popular option for both Paleo and low-carb meal options. If you are brand new to Paleo, just visit your local health shop. They usually have all kinds of alternative flours, oils, and substitutes for just about everything.

Since this is a doughnut recipe, you will need a doughnut griddle, which is nothing but a regular griddle shaped as a doughnut. I know people, however, that can figure out how to make the doughnut shape themselves. This recipe will make about 10-12 donuts, depending on the size that you are looking for.

If you are not sure about texture or softness, it may not be a bad idea to make doughnut holes first, so you can practice. Just take some of the dough, once prepared, and make little balls with it. Test-drive them in the oven, and you may have a better idea of how they may turn out.

I will make a confession: I sometimes slice one of my donuts into two equal halves, and use them as bread to make a decadent egg sandwich with all the goodness of the salty and the sweet. You can also make doughnut “toast” and spread delicious real fruit jam over it. The doughnut holes are great for quick and easy snacking.

  • For the dough, you will need:
  • ½ cup coconut flour
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ⅛ teaspoon Celtic sea salt
  • 2 eggs
  • 2 tablespoons honey
  • 2 tablespoons liquid coconut oil
  • ½cup warm apple cider
  • For the cinnamon sugar mix use:
  • ½ cup granulated coconut sugar
  • 1 tablespoon cinnamon
Instructions
  1. Coat your baking pan (or donut making griddle) with 2 tablespoons of MELTED coconut oil. Make sure it is pre-heated by the time you are ready to add the dough.
  2. Procedure:
  3. Start with your dry mix to make the flour- Just as with regular baking, put together the coconut flour, baking soda, cinnamon, and the salt.
  4. The wet mix: Eggs, oil and honey. Mix them in a medium bowl.
  5. Mix the dry and wet mixes together.
  6. Once the dough is completely mix, add the warm apple cider.
  7. All you need to do after this, is to scoop out your donut mix, and place it in the griddle or pan. Just use one and half tablespoons for each donut. Remember that less is more because it will “blow out” into a delicious, doughy treat that will smell heavenly as you cook it.
  8. Use the melted coconut oil to brush onto the donut so that you can sprinkle them with the cinnamon sugar mix. The coconut oil will let the mix stick.
