Palak Pakoda Kadhi - Punjabi Pakora Kadhi Recipe

A new post again after a while and it's my new HOT favorite...Pakora Kadhi! The delicious and lovely Punjabi Pakora kadhi is my new addiction in vegetarian food and I have tried to make it even more interesting by adding Spinach/Palak Pakora to the kadhi.
I tweaked the recipe of a regular kadhi slightly and it was so yummy that it works perfectly with roti and rice too.
Spiked the yogurt curry with tadka of spices and it was so amazing that yogurt gravy did not taste sour at all.
A lot of my friends served Punjabi kadhi for the parties/Potlucks and I used to love hogging it. This time I thought of giving it a try and absolutely loved it.
The gravy has yogurt which is very good digestion and apart from the various health benfits that yogurt has to give, the kadhi also has spinach kofta/pakora in it,which is not deep fried but rather cooked with just few drops of oil.
That looks a very promising option than deep fried version.

If you are a Popeye Fan or not,still we all love including greens in our diet. So Spinach pakora or Palak pakora is the main ingredient of this kadhi.
I chose Palak than regular pakora as then it would be simple onion pakora and Palak will give additional health benefits.
Spinach Chicken Momo, Palak/Spinach Chicken Curry, Palak Paneer Roll, Hariyali Chicken. Well that's still small list to share. I will be sharing more Palak recipes in future too.

I wish I had tried this kadhi a lot sooner, as this is very close to my favorite Goa recipe of "Takachi Kadi" ,that is "Flavored Buttermilk Kadhi". Although the spices and ingredients differ slightly but somehow when I was eating the kadhi I remembered the Buttermilk kadhi that my mom makes and it's just perfect!
I used to feel initially that vegetarian food has such limited options but I was totally wrong! Vegetarian recipes are vast and has no boundaries.
This Punjabi Kadhi Pakora is so easy to make and can be customized as per ingredients available at home. I have used Palak here as I wanted to include Spinach in the food.But its not compulsory to go with Palak pakora with this recipe.
If you have onion,capsicum,cauliflower or cabbage then try and make those pakoras and add to this kadhi. It will be equally fantastic.


Firstly,make the pakora.
In a mixing bowl,add the palak,onion and remaining ingredients mentioned under "For Pakora".
Add very little water and make smooth batter.
Make sure the batter is not watery nor lumpy.
Heat Appe/ Aebleskiver Pan and spray some oil on it or smear with a brush.
With a spoon,drop a spoonful of batter in each cavity.
Close and let it cook till the pakora are done.
Let the pakora sit aside.
Make the kadhi.
In a mixing bowl,add the yogurt and besan.
Whisk well till nicely combined without any lumps.
To that add turmeric,milk,water and mix further.
In a pan,add oil and add the fenugreek,garlic,onion and fry further.
Add the yogurt gravy,pakora,adjust the salt.
Add sugar,coriander powder.
Let this cook on lowest flame.
In a tadka pan,add oil and when its hot,add the mustard ,cumin,hing,curry leaves,red chili powder.
Mix well and pour over the kadhi.
Mix well and serve hot with rice or roti.

Here are few tips to make the curry perfect:

  • Always use the yogurt at room temperature. Mostly what might happen when you use chilled yogurt straight from the refrigerator is that,it might curdle when you cook it in kadhi.
  • Mix the yogurt and besan well till smooth.
  • Always cook the kadhi on lowest flame or heat. This will not allow the kadhi to curdle and let it cook perfectly.
  • If the kadhi starts to thicken then adjust the consistency of kadhi with water or milk as per your personal choice.
  • You can add any vegetable pakora to the kadhi.
  • Play with the taste by doing some alterations that might suit you.
