We recently discovered this method for roasting sweet pumpkin in a restaurant buffet.This oven roasted sweet pumpkin was served as a starter and it tasted just yum.My husband wanted me to try this at home,even I liked the idea of oven roasting and I kind of created this recipe.I love to use my oven in day to day cooking as it considerably saves time.These days I mostly roast many veggies in oven like potato,sweet potato,ivy guard etc.In this method oil consumption is remarkably less and also there is no need for constant stirring and of course we should forget the time that is saved while the other dishes are cooked on stove top.For this particular sweet pumpkin recipe,I selected tender firm sweet pumpkin and cubed it after peeling.I just tossed it with salt and chilli flakes and coated with little oil.Then I baked it for 20 minutes,until the edges just started to brown. I made this as a side dish,so used chilli flake,if you are planning to make this as starter you can toss in some dried herbs and pepper powder,delicious it will be.This is not really a recipe here,just an idea and method to oven roast sweet pumpkin :)

Star ingredients: Tender yet firm sweet pumpkin
Time:10+ 20 minutes
Serves :3
Ingredients:
1 cup peeled,cubed sweet pumpkin
1 teaspoon chilli flakes
2-3 teaspoons oil
Salt
Method:
1.Preheat oven to 200C.Apply some oil to a baking tray.
2.In a bowl toss together sweet pumpkin,salt,chilli flakes and 2 teaspoons oil.Mix well.
3.Transfer it to the baking tray and spread evenly.Bake for 10 minutes.Remove from oven and stir quickly.
4.Bake for 10-15 minutes until the edges just start to brown.Serve hot
Notes:
1.The key to bake sweet pumpkins in oven is,the edges should just start to brown.This will bring out the sweetness even more with slightly caramelized flavor.
2.You can add any dried herb along with chilli flakes
3.Try to spread the pumpkin cubes in a single layer as far
as possible.
