Orange-Yogurt Cake

I love fruit! I am one of those people who regularly consumes their daily 5 portion of fresh fruit and vegetable. I never miss out on a green apple or a fresh orange or some papaya as a snack in-between meals or as a dessert-replacement after lunch or dinner.

I also like to incorporate fruit into my cooking, making sweet/sour sauces to dress meat, or make delicious muffins or cake.

Just the other day I made this orange and yogurt cake which turn out awesome! The recipe is an adaptation of Marta Stewart's. Hope you like it!

Ingredients:

  • Unsalted butter, softened, for pan
  • 1 cup all-purpose flour, sifted
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup plain whole-milk yogurt
  • 1 tbsp vegetable oil
  • 1 teaspoon grated orange zest, plus 2 tablespoon orange juice
  • 1/2 teaspoon pure vanilla extract
  • Confectioners' sugar, for dusting

In a bowl of your electric mixer combine the sifted flour, baking powder, baking soda, sugar, the zest of the orange

then crack in one egg

squeeze in the orange juice

and don't forget the oil, salt and vanilla extract.

Stir all the ingredient together until you get a smooth batter. NOTE: Do not over-beat the batter or you will get a stiff cake.

Grease and dust with flour a baking pan, then pour in the batter

and bake at 180 C (375 f) for about 25 min or until the cake got a nice golden color. Remove from the oven

and let it cool down on a wire-rack.

When the cake is completely cooled off, dust it with powdered sugar and serve.
