Whenever I feel bored with regular chapathi/roti I try to make it more interesting and healthy with very few changes and that often becomes an entirely new and tasty dish.As most of you know quesadilla is a famous Mexican dish,where a corn or flour tortilla is filled with cheese and few other optional ingredients. I have already blogged a version of vegetable quesadilla here.In the previous recipe,I had sauteed the veggies with few spices and then used them to make quesadilla but in this recipe I have used only onion and tomatoes that too raw along with cheese.Initially I was skeptical to try as I thought the smell of raw onion may bother us.But this quesadilla was just awesome,very less work compared the other version and equally tasty too.Just onething you have to make sure is use tender veggies that need very less time to cook while the cheese melts.Lets move on to this quick recipe.
Onion tomato quesadilla recipe

Ingredients:
For wheat tortilla
1 cup whole wheat flour
2 tablespoons oil
Salt
For filling:
2 large tomatoes chopped very fine
1 large onion chopped fine
1/2 cup grated cheese(jack cheese/cheddar)
Chilli flakes
Salt
2 teaspoons oil
Method:
Tortilla
1.Take all the ingredients mentioned and knead to a smooth dough.Let it rest for 20 minutes.
2.Now divide the dough into 6 equal portions and roll like roti.Make them as thin as possible.
3.Heat a cast iron tava,spread little oil and place one rolled tortilla.Heat for just 10-15 seconds and flip.Heat the other side for 10-15 seconds.Repeat the same with all the tortillas and stack them till we get the filling ready.
Filling:
Mix all the ingredients mentioned in "for filling".
Making quesadilla
1.Take one cooked tortilla on a clean surface and add grated cheese.Spread the filling as seen in picture.Close from the other side.
2.Cook on medium flame from both sides till golden brown and edges are crispy.
3.Cut into wedges and serve hot.
Notes:
1.Do not let filling rest,it may turn the quesadilla soggy.
