Olive Fried Rice (vegetarian) 橄榄菜炒饭

Years ago, I have learnt how to cook a dish of Olive Fried Rice before and it was delicious.  

Anyway, during a recent birthday celebration, we ordered Olive Fried Rice (vegetarian) but was disappointed by the oiliness of the dish.  However, the taste was really good even though it is a vegetarian dish.

Today, I will replicate this.



What you need:

8 bowls overnight jasmine rice

1 jar of HK Preserved olive, chopped finely
1 cucumber, cubed

1 red capsicum, cubed
6 egg, beaten
4 tbsp minced garlic
0.5 tbsp fish sauce (to taste)
Pepper

* you can replace cucumber and capsicum with green peas and corn as I had in the restaurant


Method:


Heat wok until over hot.  Sautee minced garlic until fragrant.


Add in minced olive and fry until well combined.  Remove.

Heat wok and scramble the beaten egg until cooked.  Remove.

Heat wok again and add in oil.  Wait till oil starts to smoke, add in rice.  Spread it out gently so that rice is contact with wok.  

Add in the olive and eggs and stir until combined.

Seasoned with fish sauce and pepper.  Stir well.


Add in cubed cucumber and capsicum and stir well.


Serve hot.
