Okra Fry with Peanuts

Okra is one vegetable that I don't cherish much.Well, the reason goes without saying,yeah the ever known 'okra slime' :). So in our home mom always made/makes okra very very crispy until almost it turns black if she wants my sister or myself to eat it. With that said,when I was working,we had an Andra meals outlet in our canteen and the meals there will be so tasty,though it was very oily and spicy we liked to eat there once in a while.I just loved the okra fry they served there and the best part was the addition of roasted peanuts to the fried okras. I have never tasted that any where before and it was totally new to me.Later on I came to know it is an Andra special dish.
Recently I tried to recreate the dish in my home and it was really tasty and we all enjoyed it.Here is how I made it.I made the basic fry using my recipe and added peanuts to it finally.

How to make okra fry with peanuts-recipe
Ingredients:
1/4 kg okra
3 table spoon peanuts
1 table spoon gram/besan flour (kadali mavu)
1 table spoon rice flour(arisi mavu)
2 table spoon curd(yoghurt)
1teaspoon chilli powder
1 teaspoon turmeric powder
1/2 teaspoon asafoetida
1 teaspoon coriander seed powder
1 teaspoon mustard seeds
Curry leaves
Oil,salt
Method:
1.Wash and dry okra thoroughly.Cut in into narrow strips or small circles.
2.Take a large mixing bowl,add all the powders except including salt,mix in the curd,add the cut okra and marinade for 20-30 minutes.
3.In the mean time dry roast the peanuts and crush it coarsely.Remove the skin.
4.Heat oil in a cast iron kadai,temper mustard and curry leaves,add the okra and saute.Saute well for nearly fifteen minutes continously,adding little oil in the middle if necessary.All the marinade should be absorbed by okra and it should start shrinking in size,once done,add the crushed peanuts,toss gently and remove from heat.Serve with rice and sambar or rotis

Notes:
1. I generally add 3-4 teaspoons of oil for the above mentioned quantity.If sauted continuosly it turns out wonderfully roasted.If you want to further reduce oil you can try using non stick kadai,but the fry made in cast iron kadai is best in taste.
2.There should be no trace of moisture at all in okra or cutting board and knife.Thouroughly pat dry the washed okra,cutting board and knife before chopping.
3.You can add finely chopped onions while tempering and leave off asafoetida in the marinade
4.Using a mortar-pestle or rolling pin is best method to crush the peanuts.
