Nutella & Caramel Stuffed Brioche is a simple dessert that is really quick and easy to make and fun to make as well. You can assemble it ahead to a certain point and then finish it up quickly at the last minute, which makes it the perfect dessert for entertaining.
If there are more, you can easily make more than one. The buns are meant to be toasted over the dying embers of your charcoal grill, or on the cooler edges of your gas grill, but don't worry if you don't have a grill!
Its incredibly adaptable. I cannot claim the inspiration for this myself. I adapted it from an idea that I saw on the Sainsbury Magazine site and it is accredited to Helen Graves.
As soon as I saw this recipe, I was intrigued. It looked so easy to make and delicious.
And it could not get any simpler. You begin by spreading the cut sides of a brioche burger bun with some Nutella chocolate spread.
Its a wonderful ingredient to use in simple desserts like this one. So creamy and chocolatey.
This will be a pretty sweet dessert so the tartness of the cherries makes a welcome contrast.
A bit of crunchy nuttiness. Again, going very well with the cherries and the nutella.
Just until the bun toasts a tiny bit and is warmed through, that Nutella beginning to melt.
Once you have achieved perfection here, you can take them off the grill and fill them with a good vanilla ice-cream, drizzle them with some warmed dulce de leche, and replace the tops, again drizzling them with more dulce de leche.
A final sprinkle of a few more nuts and cherries and dessert is ready to serve. Easy and indulgent. Delicious.
Gilded and buttery rich brioche . . . I do so love brioche. Its a lovely bread and perfect for this. Creamy, chocolaty Nutella . . . deliciously scrummy . . .
The salty crunchiness of the toasted nuts, the tartness of the dried cherries . . .
Altogether this is one beautifully simple, indulgent and delicious dessert! Make sure you tell your guests to leave room for dessert and they know that you mean it! This is quite filling.
You could always cut the rolls in half crosswise so that each roll feeds two. Its all up to you and your appetites!!!! I could not eat the whole thing myself. But I sure did enjoy the few bites that I had. I think you will too!
Nutella & Caramel Stuffed Brioche

- 1/2 TBS butter
- 1 Brioche burger bun
- 2 TBS Nutella
- 2 TBS toasted nuts and dried cherries, coarsely chopped
- 2 TBS dulce de leche
- vanilla ice cream to serve
Instructions
- Have ready a foil pan large enough to hold as many buns as you are doing.
- Split the bun and spread the insides with the nutella. Sprinkle inside with half of the nuts, and put the buns back together.
- Melt the butter and brush the outsides of the bun with it. Put the bun into the foil pan and cover tightly with more foil.
- Place on the edge of your grill to warm and toast. (Alternately you can warm them in a 350*F/180*C/gas mark 4 oven. You want it to be a little toasty on the outside, but still soft inside.
- Warm the dulce de leche. Remove the bun from the foil pan and place onto a plate.
- Open up and top the bottom half with some vanilla ice cream. Drizzle with a bit of the dulce de leche. Place the top bun on top of the ice cream and drizzle with the remaining dulce de leche. Sprinkle with the remaining nuts/cherries and serve immediately.
