Noodles Stir Fry

When I went for grocery shopping recently,I purchased a pack of rice noodles.I have been seeing and hearing a lot about rice noodles lately and wanted to see what it is really like.Here I should mention I am not a fan of any instant noodles that comes with packed masala.So I thought preparing something from scratch using rice noodles will be worth a try. Now when I started searching on net for recipes with rice noodles Pad Thai topped the list.Pad thai according to wiki is a stir fried noodles with eggs,bean sprouts,tofu and fish sauce.Being a vegetarian I kind of came up with my own recipe for this famous dish with what ever ingredients I had in my pantry.I dare not call it Pad Thai :),but I can safely say this is a very interesting recipe with lots of veggies,rice noodles,pickled oil topped with roasted sesame and peanuts.Absolutely yummy and filling :)

Noodles stir fry-Inspired from Pad Thai
Start ingredient-Rice noodles
Time 20 minutes
Serves 3

Ingredients:
125 grams rice noodles
1 green bell pepper chopped fine
1 carrot chopped fine
1 large onion chopped fine
1/4 cup green peas
2 table spoons tomato pickle oil
Small piece of ginger crushed
Small clove of garlic crushed
1 teaspoon sugar
1/2 teaspoon sesame oil
1 table spoon roasted peanuts
1 tablespoon roasted white sesame seeds
Method:
1.Cook rice noodles according to packet instructions.Just add 1/2 teaspoon oil to the pot of water and drain immediately once cooked to prevent from sticking.

2.In a wide skillet,add little oil and add ginger and garlic.Saute for few minutes.Next add the vegetables and saute for just 2-3 minutes.Vegetables should be still crunch.Add salt and sugar and mix well.

3.Add the drained noodles,oil from pickle and mix well.Saute for maximum 3 minutes and remove from heat.Top with peanuts and sesame seeds,serve hot.

Notes:
1.Add any kind of sprouted beans if you have in hand.
2.I added oil from pickle instead of sauce.Chilli sauce can be added instead of oil from pickle.
