No-bake Sweet Potato Mini Cheesecakes

I just love the holiday season. There's just something about everyone being in great spirits that makes me all warm and fuzzy inside. I also love the P&G Company. I'm not sure how anyone could make it through the holidays without them. P&G makes the best household products in my opinion. I have been using Gain Original Fresh since it came out. I love the way it smells. ­ It's so fresh and clean, and the scent isn't overpowering but still enough to make you love the way your laundry smells. Gain's cleaning power is unparalleled. It's my favorite detergent for a reason (really for a few reasons).

I also use Dawn Platinum Advanced Power to get the dishes done quickly. Dawn has always been a pretty popular name when it comes to dish soap - if someone mentions "using Dawn" you know they're talking about washing dishes. The Platinum Advanced Power cuts through grease and grime with no problem, including the baked on mess. We do a lot of dishes with melted cheese and sauces, and a little bit of dish soap really does the trick.

Speaking of dishes made with cheese, I made some No Bake Sweet Potato Cheesecakes the other day. They really came out delicious! Here's the full recipe:

NO-BAKE SWEET POTATO MINI CHEESECAKES

Recipe type: Dessert

INGREDIENTS

  • ½ cup canned sweet potatoes
  • ½ cup frozen sugar-free whipped topping, thawed
  • 8 oz. cream cheese, softened
  • 3 tbsp. splenda
  • 2 tsp. pumpkin pie spice
  • 1 (6-count) Mini Graham Cracker Crusts
  • Walnuts, for garnish

INSTRUCTIONS

  1. In a medium mixing bowl, beat together the cream cheese and sweet potatoes until nice and creamy.
  2. Gradually stir in the pumpkin pie spice, splenda and whipped topping, mix until creamy.
  3. Next, spoon the mixture evenly into the six pie crust.
  4. Refrigerate for 4 hours, then sprinkle with nuts

Holiday baking around here is one of those things that starts back in the beginning of November. We crank up the music and start baking. It's always great fun for me and the kids, and we all look forward to it every year. Obviously we do cookies, but we do a lot of other things as well, like these cheesecakes and scones and even some main dishes. Our entire home is filled with the scents and the sounds of the season throughout the entire months of November and December.

I shop at Costco for just about everything I need during the holiday season, from food to cleaning products. Trips to Costco together during the holidays have become somewhat of a tradition. The kids like to point out things they'd like for Christmas, and I really enjoy having them with me both for their company (*and also for extra hands bringing in the groceries!) We also decide what to buy for the rest of the family while we're there. One of us picks up a sexy undergarment and says "Hey, let's buy this for Aunt Kay!", and then we all laugh because Aunt Kay can't even say the word "bra" without blushing. It's just a really great time for everyone involved. #HolidayMoments

Then we do a group house cleaning effort (no one really loves that part, but it's more fun with holiday music and lots of help), and we get the house ready for guests. Of course, there are lots of laughs and lots of selfies involved. It's what the holidays are about.
