A few years back when I was enjoying the pleasures and hardships of country side, Winter used to be the most dreaded season of the year. There was tons of snow and the temperature dropped 11 Cardamom and Rose Hot White Chocolate below the freezing point.
When there's snow outside and the temperatures are freezing my craving for sugar sets in. One of my favorite sweet memories associated with harsh country side winters is coconut snow balls. I love them for several reasons Firstly, they go very well with my , they are fairly easy to prepare and are my best bet when I need a quick sugar fix.
Today I planned on making them but with some variation. I had some left over pineapple in my fridge so I thought what could be a better way to use the pineapple and create a different variation of coconut snow balls which would be Pina Colada snow balls.
You have to keep a few points in mind while making these delectable sweet treats.
Firstly make sure to squeeze out the juice from the pineapple pieces before adding it to the snow ball mixture, you can easily achieve this by pressing the pieces with the back of a spoon and then tilting the container to drain it off into a recipient.
Melt the coconut butter before adding it to the coconut sow ball mixture. I forgot to carry out this crucial step and had a hard time working out with the mixture.
Now for the serving, besides satisfying your sweet tooth these snow balls can be served for tea as a quick snack and of course in kid's lunch boxes for a homemade sweet treat.

coconut flour1/2 cup
desiccated coconut 1/2 cup
brown icing sugar5 tbsp
honey2 tbsp
coconut milk8 tbsp
coconut butter2 tbsp
pineapple cut into pieces1/4 cup
vanilla extract1 tsp
Take a medium sized ball and mix both the coconut flour and the desiccated coconut.
Mix in the brown icing sugar, honey and coconut milk, also add the coconut butter and vanilla extract. Don't forget to melt the butter before adding into the mixture.
Cut the pineapple into tiny pieces.
Drain off the juice from the pineapple pieces and add into the coconut snow ball mixture. Mix every thing with your hands until a dough like mixture is attained.
Take some extra coconut flour or desiccated coconut for rolling the pina colada balls.
Now make small balls out of the prepared mixture.
Roll into the coconut flour or desiccated coconut.
Place the balls in the refrigerator for a few hours before serving.
That's it Pina Colada Snowballs are ready to be served.
