No bake energy balls are extremely popular these days, and I can see why.
These protein packed balls of goodness provide a sweet treat pick-me-up at the end of the day when I still have to head to the gym, and dinner is nowhere in sight.
Just take a peek over at Pinterest and you'll find an amazing variety of these tasty snacks.
Some are filled with chia and flaxseed, some with chocolate chips, some with peanut butter, and some with dried fruits. The ideas are endless!
When I discovered PB2 powdered peanut butter at our local Fred Meyer for the same price as 100% peanut butter, I decided to give it a try.
My thought was it would make a calorie friendly energy ball since it's lower in fat and sugar than most peanut butters.
After a whirl in my food processor with a can of black beans, oats, honey and Hershey's Special Dark Cocoa Powder, my energy balls were ready for a chill in the refrigerator after I rolled them into delicious looking balls.
At just 60 calories per bite, with loads of protein and fiber to keep me satisfied until dinner, these no bake energy balls are definitely a make again. They have a texture much like chocolate cookie dough, and would make a terrific after school snack for kids.
In fact, now that I think about it, no bake energy balls would be a fun snack for kids to make! Just hand them a potato masher, and they wouldn't even have to mess with your food processor or your oven.
