No-bake Cherry Tart with Oreo Base

It is kind of interesting how one recipe can lead you to the other. Like the one I am posting today and the cherry chocolate muffin I wrote about last week are in some way related. First of all I cannot keep myself from buying the blushing boxes of cherries I spot in the market these days – I feel they call out to me everytime I walk past them! And although the boys love to pop each one in their mouths as they sit down after dinner; I love browsing through the recipes I can put those cherries to use. Cherry pitting is messy and gets more chaotic especially with a toddler, but I know we are going to miss it once the season is gone. As much as we miss licking mango juice drifting down our elbows – I can never-ever get over it. Sigh!

We were invited to a chaat cum karaoke party at our friend’s house a few weeks back. Whenever we have to visit someone’s house, I only find it apt not to go with an empty hand. So amidst all the Ramadan hooh-aah and house renovation, I managed to sneak in this gorgeous looking (and delectable) no-bake and no-dough tart which only demanded 15 minutes of labor including pitting the cherries. This recipe draw huge inspiration from a video I watched on Home Cooking Adventure’s you-tube channel demonstrating strawberry-chocolate tart. Later I discovered that the web is inundated with such ideas/recipes. I could have made this sweet-something long, long back considering my family’s every growing addiction to desserts and my inclination towards easy treats, but I didn’t. I was probably waiting for a time when this wicked item be shared rather than gulping down all within three of us.

This tart is non-surprisingly very simple like many other recipes on this blog. Well, imagine putting together favorites in one recipe – cherries, chocolate and oreo biscuits plus it doesn’t need to go to into an oven! It doesn’t get much easier than this, right? The irresistible chocolate filling is that of a chocolate ganache; heavy cream and chocolate simply melted together to form a sinful filling! Although I made a huge tart, you can always opt for small tartlets that are cute party pleasers! And swap cherries with other fruits that are in season! And remember to share…

No Bake Cherry Chocolate Tart with Oreo Base

  • Servings: 8 slices

Ingredients :

for the tart base;

  • Oreo biscuits – 20 (whole)
  • Unsalted butter – 3/4 cup, at room temperature

for the chocolate filling;

  • Dark chocolate – 100 gms
  • Heavy cream – 100 ml

roughly 30 cherries.

Method :

Place biscuits in a food processor and whizz at medium speed until it form into crumbs. Pour butter and mix till fully incorporated. Line the tart tin with the biscuit mix, patting well at the center and the round with fingers. Keep a dent in the center for it to hold the chocolate filling. Transfer into a refrigerator for the tart shell to solidify. Make a ganache filling by heating the ingredients together over a low heat until melted and glossy. Pour ganache into the center of the tart shell and refrigerate for 30 minutes. Pit the cherries and slice them into half (or keep them whole). Top the tart with cherries after the chocolate ganache has set. Serve chilled.
