Hope you all doing good.I think am feeding my blog very little in past few months and here i came back again for my blog's anniversary.Its really surprising and exciting one for me that am entering my 5th year.Last year made nutella cheesecake mousse which was really yum and this year too i came with a summery bright cheesecake which is a no bake one,as usual.I want to make an Indian dessert for this year but unfortunately some personal issues blocked and whipped up this dessert quickly for this year.
For the blog,the past year was slow and steady and i love this one and was very particular in selecting recipes in the blog.Totally i posted around 60+ recipes calculating from june 2015 - june 2016.So this year,i think i will post more recipes as much as i can and also am taking time making pictures to be more yummy and concentrating more on photography.Thought of concentrating more on Indian sweets and desserts along with some more traditional recipes and also some readers expecting recipes.
It was like a dream and cant able to feel its already 4 years in blogging.I am entering this 5th year and eagerly waiting for more explorations in cuisine which i did not able to make till now.Successfully keeping my no bake mood for past 3 years and am still happy about that.This year gonna be as i already told you,more more traditional recipes which was unable to post last year.I dont want to post anniversary celebration post,but after seeing my posts for past few months,i want to get back to it and make this blogging again in a regular manner.I thank everyone you readers,friends,family members and also lots of readers who visit this site everyday.This post is dedicated to you all and here comes the recipe for this year beginning of the blog.
cherry , which i always waiting for the season to pick fresh ones,but this year i got luckily from bigbasket.com.Thank you bigbasket for giving such fresh cherries this season.They are little sour and have some left in refrigerator,thought of making some more recipes from it.I made a compote from cherry to top it and it includes powdered sugar,corn flour and cherries along with a teaspoon of water to make a paste with corn flour.
I used my homemade cream cheese which is so easy to make with available ingredients in your pantry.Make your crust ready with digestive biscuits and melted butter and make your cream cheese the previous day.Was making cheesecake very rarely and this time, i want to make a chocolaty treat but having my diet in mind,so left that option and move on with the summery bright cheesecake.Made the cheesecake mixture with condensed milk and cream cheese to avoid more sugar in the recipe.If you are looking for without condensed milk recipe,then add icing sugar or powdered sugar and mix it well with the cream cheese.Blend it nicely to avoid the lumps of cream cheese in the filling.
Coming to the pictures,took this almost mid afternoon and had a little time to get some fresh cherry snaps for the post.Cherries are rich in potassium as bananas and i love the taste of sweet and sour cherries.The darker ones tastes more sweet and little brighter ones tastes little sour and love both of them.Tasting fresh produce is really a refreshing one and we are accessible only to glazed cherries and we rarely see the fresh cherries in market or it was out of stock ones.I have an experience with kiwi fruit and bought it for trying some recipes and also for tasting too.Have waited for 1 1/2 weeks and i did not kept it in refrigerator ,for ripening.But no results there and i asked some of our blogger friends about that and they said it will ripe soon and tastes tangy like citrus fruit and it tasted tangy,loved it.
Planned to make it in shot glass,but having tartlet pans in hand and also some more cheesecake filling,i immediately take one of them and made it..I got these mini tartlet pan from amazon for making some no bake goodies in home.I already posted no bake chocolate tart recipe,check that recipe too.V enjoyed this one and said it was well set and no one can identify this is made with paneer and condensed milk.This is what i want after a recipe making and i was so satisfied with the results.One thing you have to keep in mind that,dont urge the process of cheese making in refrigerator,otherwise your cheesecake will take time to set rather than usual.Make your cream cheese and set it in refrigerator overnight and make the recipe.
For cream cheese,you have to make paneer first out of 1 litre milk.Strain the liquid completely and make sure there were no more water content in the paneer as we make for rasgullas.Take your paneer in measuring cup and measure it,say 1/2 cup paneer.For that paneer add 2 tablespoons of yogurt and blend together in the blender.If needed add a teaspoon of yogurt and blend it again.After blending pour the mixture in a cheesecloth with the strainer and a vessel beneath.Leave it for 2 hours and then refrigerate it overnight.The next day you will see approximately 1 teaspoon of liquid in that vessel.Now your cream cheese is ready to use for making spreads or for desserts.I already shared step pictures of making cream cheese in the blog,check it for more detailed recipe.lets move on making the recipe,

- cherry - 10 nos
- cream cheese - 1 cup
- condensed milk - 2 tablespoons
- corn flour - 2 teaspoons
- water - 1 teaspoon
- powdered sugar - as needed
- biscuit crumbs and melted butter - for base or crust
- Melt the butter and add the biscuit crumbs to it and make a sandy mixture.Place it in the bottom of the serving dish.Press it gently with spoon of fingers.
- take your cream cheese in the mixing bowl and add the condensed milk(make sure your cream cheese should be in room temperature or wait for few more minutes and then proceed)
- Using a whisk,blend it smoothly and make sure there were no lumps in it.Pour it till 3/4 th of the dish and set it in refrigerator for an hour.
- Meanwhile prepare your compote and keep it ready,for that wash the cherries and remove the seeds and chop it roughly.
- In a sauce pan ,take the cherries and powdered sugar and give a mix.Bring it to heat and in low flame keep on stirring.Once it starts to leak the juices,the color begin to change and keep on mashing the cherries randomly to give some texture and leave some as it is.
- Make a paste with corn flour and water and add it to the cherry.Keep on stirring,Once it gives a shiny texture and starts to thickening,switch off the flame and cool it completely.
- Pour the compote over it and chill it again.serve chilled.Top it with fresh cherries before serving.
